Ingredients

  • 2 cups cooked rice I used brown rice
  • 1 can black beans washed and drained
  • 1 head of romaine lettuce chopped
  • 1 pint cherry tomatoes chopped
  • 2 cups corn thawed if it was frozen
  • 1 avocado mashed
  • 1/2 red onion chopped
  • 2 tablespoon pickled jalapeƱos

Cilantro dressing

  • 1 cup loosely packed cilantros chopped
  • 1/4 cup vegan mayonnaise
  • Juice of half a lime
  • 1-2 garlic cloves
  • 2 tablespoon olive oil
  • salt black pepper and maple syrup, as needed
  • 1 teaspoon white wine vinegar

Instructions

  1. Put all the ingredients in a bowl, top with the mashed avocado.

Cilantro dressing

  1. Puree all the dressing ingredients in a food processor and puree until smooth
