Whole Wheat Walnut Olive Oil Bread

Walnuts and olive oil in a bread is a magic combination. The rich flavors complement each other perfectly and choice of whole wheat only enhances it.

Baking rustic loaves or baguettes at home might be challenging. Not everyone will have the oven and/or the patience for every bread. But this one, I believe, is practical for most. It is one of my favorite breads to accompany a filling breakfast or for any time I want to treat myself to comfort carbs.

If you have been following Dreamy Leaf, you have seen similar breads by me (Whole Wheat Tahini Chocolate Bread and Whole Wheat Cinnamon Swirl Bread). This one though, is not sweet. It goes perfectly well with both savory and sweet spreads or sides. As before, the recipe is relatively easy to make, but hard to describe. But the pictures and the video below should help with that. Please make sure to watch it before (and during) making the recipe.

Whole Wheat Walnut Olive Oil Bread
Nothing like a homemade, wholesome bread

Ingredients
  • 3 cups whole wheat flour
  • 1 1/2 cups water lukewarm
  • 1 cup walnuts chopped
  • 1/4 cup olive oil
  • 1 1/2 tsp yeast
  • 1 tsp salt
  • 1 tsp maple syrup
Instructions
  1. Watch the animated recipe on this page
  2. Mix the whole wheat flour and the salt, set aside
  3. In a glass, mix the water, maple syrup and the yeast. You can sprinkle a pinch of flour in there as well
  4. Let the yeast mix activate, foam and rise, about 10 minutes
  5. Make a pit in the flour mix and pour in the yeast mix
  6. Hand mix to make a dough and knead for about 5 minutes
  7. Cover the dough container and let it wait, in a warm place, for about 30 minutes, or until it approximately doubles in size
  8. When the dough has risen, split it in 3 equal parts with a knife
  9. On a surface lightly coated with olive oil, hand press one piece of the dough into a flat round shape. Coat the top generously with olive oil and push the dough in all sides with your finger to roll it out further, until it looks like a pie for a medium pizza
  10. Add 1/3 of the chopped walnuts and spread it over the top
  11. Add another piece of the dough on top and roll it out (by hand), much like before with the help of olive oil. Add another 1/3 of the walnuts
  12. Repeat for the last piece of the dough
  13. When all 3 layers are complete, cut the pie in half
  14. Put one half over the other. It should look like a half circle with 6 layers
  15. Slice the dough in approximately 2 inch wide strips
  16. Twist and elongate each strip by rolling (place on the surface and with both hands, roll two ends in opposite directions at the same time).
  17. Place each string in a baking pan or an iron cast pan (slightly coated with olive oil)
  18. Place in the oven preheated to 400F, bake for about 30 minutes or until golden on top
