Vegan Tuna Goddess Salad

This is hands down the best sandwich I ever made! Combining the flavors of goddess sauce with a Mediterranean twist, and the texture of chickpeas and artichokes, this tastes and feels amazingly like a delicious tuna salad. It hits all the right notes and makes for a super practical, power-packed lunch option.

I am using my vegan cheddar cheese spread (recipe here) at the bottom of sandwich but feel free to use any vegan cream cheese or mayo.

Vegan Tuna Goddess Salad

Servings: 2 cups
  • 1 garlic
  • 1/2 cup parsley chopped
  • 3 green onions cut in half
  • 1 tbsp olive oil
  • 1/3 cup nutritional yeast
  • 2 tbsp sun dried tomatoes chopped
  • 2 tbsp capers
  • salt and pepper for taste
  • 1/3 cup tahini
  • 1/4 cup water
  • Juice of half a lemon
  • 1 cup marinated artichokes
  • 1 cup chickpeas cooked
  1. Add all the ingredients, except lemon juice, artichokes and chickpeas into food processor. Grind to chop and combine but don't over process, make sure to leave some texture.

  2. Add the rest of the ingredients and pulse a few times to break down chickpea and artichokes.

  3. Serve in a sandwich or use as a protein topping over your salads.

    1. I didn’t know Pinterest didn’t work, may be because of the video :/ Thank you for letting me know! I will fix the issue ASAP. As for the greens, I put arugula on the bottom over the tomatoes and clove sprouts on top.
