Vegan Hazelnut Tiramisu

Hazelnut Tiramisu
I hope you are in the mood for an impressive dessert, rich with flavors of coffee, hazelnuts, cashews, rum and chocolate. I certainly was (and still am), so I set out to make this wonderful tiramisu. It is, of course, vegan, and it involves no cooking or freezing. Naturally, it is super easy to make once you have all the ingredients on hand.

The recipe calls for vegan cookies. If you would like to make this recipe gluten-free, the cookies can be considered optional. Otherwise, I strongly recommend them. The ones I used are the speculoos cookies (from Trader Joe’s) and they were one of the inspiration sources for this dessert. We used to enjoy them before we were vegans and we were delighted to find out now that they are vegan cookies.

Sadly, the tiramisus  are long gone by now. As I am writing this recipe, I am constantly resisting the urge to take a little break and go make some more. This may be surprising but one of the best parts of a vegan diet is the desserts! They are, generally speaking, much lighter and tastier than their dairy equivalents (if any) in my opinion. And to top it off, many of the vegan dessert don’t involve cooking as almost all things plant based are safe to consume raw. Here is the recipe.

Cream layer
  • 1/2 cup raw cashews soaked overnight
  • 1/4 cup almond milk
  • 1/2 cup maple syrup
  • 1/4 cup hazelnuts roasted
  • 1 teaspoon vanilla extract
Coffee Layer
  • 1 cup raw cashews soaked overnight
  • 1/2 cup almond milk
  • 1/4 cup plus 2 tablespoon maple syrup
  • 1/2 cup hazelnuts roasted
  • 1/4 cup espresso or 3 tsp instant coffee mix 1/4 cup hot water
  • 3 tablespoon cacao powder
  • 1 tablespoon coconut oil melted
  • 3 teaspoon dark rum optional
  • 1 teaspoon vanilla extract
  • 4 vegan cookies and more for decoration speculoos cookies preferable
Topping (optional)
  • 1 tablespoon shaved dark chocolate
Cream layer
  1. Put all the cream ingredients in a high speed blender and blend until you get a soft, smooth texture. Set a side.
Coffee layer
  1. No need to clean the blender yet. Blend all the coffee layer ingredients, except the cookies, until smooth.
  1. Put the coffee layer in serving cups.
  2. Insert a cookie, split in half, into the coffee layer in each of the cups.
  3. Add the white cream layer.
  4. Refrigerate for at least 1 hour.
  5. Decorate with chocolate shavings and more cookies before serving!
