Vegan Apple Cake
It’s been a while since I baked one of these vegan cake loaves of ultimate comfort. What better way to start celebrating the fall but with an apple cake. This one uses little oil and it is made with half/half mix of whole wheat flour. It came out at just the right consistency. Perfectly moist but not wet, fluffy but not spongy. Cake lovers will appreciate this one. The best part though, was the top. The apples on the top baked into a delightful texture. Here is the recipe:

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 cup plant milk i used almond milk
  • 1/2 cup maple syrup or agave syrup
  • 1/4 cup apple sauce
  • 2 tablespoon peanut butter
  • 2 tablespoon coconut oil
  • 1 tablespoon dark rum optional
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • pinch of salt
  • 2 apples peeled, cored and sliced thin
  • 2 tablespoon coconut oil
  • powdered sugar optional
  • Juice of 1/2 lemon
  • Pinch of salt
  1. Preheat oven to 380F.
  2. Put the flour, baking powder, baking soda and a pinch of salt in a large bowl. Mix and set aside.
  3. Put all the wet ingredients of the batter in a separate bowl and mix.
  4. Combine dry and wet ingredients with a spatula.
  5. Pour the batter in a cake pan coated with oil. I used a loaf pan of about 5x7 inches.
  6. Put the apples in a small bowl.
  7. Add the lemon juice first and mix. Then add the coconut oil.
  8. Tile the apples over the top of the cake batter.
  9. Bake the cake for about 45 to 50 min. (May change slightly depending on your oven. Check every now and then towards the end by dipping a toothpick in the center of the cake. It is done when the toothpick comes out clean).
  10. Remove the cake from the oven, let it cool for about one hour before serving.
  11. Optionally, sprinkle the top with powdered sugar.

      1. I made a GF version this afternoon, substituted 1C almond meal and 1C all-purpose GF flour for the flours. The texture is great, but the peanut butter taste & smell is too pronounced. Next time, I’d use almond butter. But overall, very pleased with the results!
