Tostones Hondureños
Ingredients
- Ingredients:
- Fried Plantains:
- 4 green/ripe plantains
- avocado oil
- Red Sauce:
- 1 can tomato sauce
- 1/2 cup chopped cilantro
- 1/2 cup chopped onion
- 1 tablespoon garlic powder
- 1 tablespoon dijon mustard
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- 2 teaspoons salt
- 1 lime juice only
- Refried Black Beans:
- 2 cans black beans drain only one can
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 1 teaspoon black pepper
- 2 teaspoons salt
- 1 teaspoon red pepper flakes
- 1 cup chopped cilantro
- 1 cup chopped onion
- juice of 1/2 a lime
- Toppings:
- cabbage shredded and salted
- sliced avocado
- cashew parmesan
- chopped cilantro
Instructions

(Refried Beans)

Add both cans of black beans to a blender, along with the liquid from one can of beans. Add in all remaining herbs, spices, and onions for the refried black beans, and blend.

Add about 1/2 tablespoon avocado oil to a pot, and heat up the refried beans.

(Red Sauce)

Add 1 tablespoon avocado oil to your pot.

Add onions to pot and stir to coat and sauté
-
add salt, pepper, garlic powder, cilantro, lime juice, mustard, red pepper flakes, and tomato sauce.

Add 1/3c of water and a squeeze more lime juice.

simmer 5 minutes

Fried Plantains:
-
cut the ends off the plantains and make an incision on both sides of the peel, length-wise to open the plantain
-
cut into logs
-
add avocado oil into your cast iron skillet, enough to completely cover the plantains
-
drop the plantains in and fry
-
take them out and press with a plate
-
fry the flattened plantains for one minute
-
Assemble with beans, avocado, salted cabbage, red sauce, cashew parmesean, cilantro, and enjoy 🙂
