  • Fried Plantains:
  • 4 green/ripe plantains
  • avocado oil
  • Red Sauce:
  • 1 can tomato sauce
  • ½ cup chopped cilantro
  • ½ cup chopped onion
  • 1 tablespoon garlic powder
  • 1 tablespoon dijon mustard
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 2 teaspoons salt
  • 1 lime (juice only)
  • Refried Black Beans:
  • 2 cans black beans (drain only one can)
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • 1 teaspoon red pepper flakes
  • 1 cup chopped cilantro
  • 1 cup chopped onion
  • juice of ½ a lime
  • Toppings:
  • cabbage, shredded and salted
  • sliced avocado
  • cashew parmesan
  • chopped cilantro
Instructions

  2. (Refried Beans)
  3. Add both cans of black beans to a blender, along with the liquid from one can of beans. Add in all remaining herbs, spices, and onions for the refried black beans, and blend.
  4. Add about ½ tablespoon avocado oil to a pot, and heat up the refried beans.
  5. Instructions:
  6. (Red Sauce)
  7. Add 1 tablespoon avocado oil to your pot.
  8. Add onions to pot and stir to coat and sauté
  9. add salt, pepper, garlic powder, cilantro, lime juice, mustard, red pepper flakes, and tomato sauce.
  10. Add ⅓c of water and a squeeze more lime juice.
  11. simmer 5 minutes
  12. Fried Plantains:
  13. cut the ends off the plantains and make an incision on both sides of the peel, length-wise to open the plantain
  14. cut into logs
  15. add avocado oil into your cast iron skillet, enough to completely cover the plantains
  16. drop the plantains in and fry
  17. take them out and press with a plate
  18. fry the flattened plantains for one minute
  19. Assemble with beans, avocado, salted cabbage, red sauce, cashew parmesean, cilantro, and enjoy 🙂
