I can’t have enough of this crumbled tofu goodness. When properly seasoned and spiced up, tofu totally transforms from bland to glorious. A good example is this recipe. I thoroughly enjoyed the deep heat and felt the nourishment seeping into my body.
- 2 tablespoons olive oil
- 1 medium onion chopped
- 1-2 cloves minced garlic
- 1 jalapeno
- 8 oz 227g extra firm tofu, crumbled into small pieces
- ½ cup tomato cubed
- 1/4 cup tomato paste
- 1 tablespoon grated fresh ginger
- 1 tablespoon cumin
- 1 tablespoon garam masala
- 1 teaspoon lemon juice
- 1/8 tsp cayenne pepper
- Ground black pepper and salt to taste
- 1 tablespoon chopped cilantros optional
Put the olive oil in a saucepan over medium heat.
Add the chopped onions and cook until onions start changing color.
Add the tomatoes, jalapenos and garlic, stir a few times.
Add the rest of the ingredients. Keep stirring and cooking for about 10-12 min.
Enjoy while hot. I recommend serving with rice, either basmati or your favorite kind. You can also garnish with chopped cilantro.
