Tofu Masala
I can’t have enough of this crumbled tofu goodness. When properly seasoned and spiced up, tofu totally transforms from bland to glorious. A good example is this recipe. I thoroughly enjoyed the deep heat and felt the nourishment seeping into my body.

Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 1-2 cloves minced garlic
  • 1 jalapeno
  • 8 oz 227g extra firm tofu, crumbled into small pieces
  • ½ cup tomato cubed
  • 1/4 cup tomato paste
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon cumin
  • 1 tablespoon garam masala
  • 1 teaspoon lemon juice
  • 1/8 tsp cayenne pepper
  • Ground black pepper and salt to taste
Topping
  • 1 tablespoon chopped cilantros optional
Instructions
  1. Put the olive oil in a saucepan over medium heat.
  2. Add the chopped onions and cook until onions start changing color.
  3. Add the tomatoes, jalapenos and garlic, stir a few times.
  4. Add the rest of the ingredients. Keep stirring and cooking for about 10-12 min.
  5. Enjoy while hot. I recommend serving with rice, either basmati or your favorite kind. You can also garnish with chopped cilantro.

  1. Hi Maya,

    Just wondering… When you say tomato paste, do you mean tomato pasata sauce that’s usually bottled, or the more paste-like tomato concentrate that’s usually in a jar? Sorry – I know they are called different things in different countries and it makes quite a difference in taste and texture!
