Threesome protein salad with quinoa, brown rice and green lentils; a delicious and satisfying powerhouse of protein and fiber.

We have been gradually increasing our workout intensity as a family. Starting with a foundation of yoga and cardio, we added rock climbing and calisthenics elements. As overhyped as the protein argument is, we needed to increase the quantity accordingly.

A really healthy way to add extra protein to diet is by various combination of grains, legumes, seeds and nuts, with the added advantage being a ton of fiber. This salad recipe is one example. Filling, delicious and so super nutritious. A side note, I usually keep a high protein, cooked mix of grains and legumes in the fridge (like this quinoa/brown rice/green lentil mix).

Ingredients
  • 1 tablespoon olive oil
  • 1/4 cup pine nuts
  • 1 1/2 cup cooked quinoa brown rice and green lentil mix
  • 1 cup finely chopped lettuce
  • 1/4 cup chopped parsley
  • 1/4 cup dried wild blueberries optional
Dressing
  • 1 lemon juice
  • 1 avocado
  • 1 teaspoon garlic powder
  • salt as needed
Instructions
  1. In a saute pan, add the olive oil and pine nuts and toast them until the nuts turn golden/brown. They overcook easily so watch out and transfer out of the pan immediately when they are done.
  2. In a large bowl, mix the quinoa/rice/lentil mix, lettuce, parsley and dry wild blueberries.
  3. For dressing, mash the avocados in a small bowl together with the lemon juice, garlic powder and salt.
  4. Combine the dressing with the salad and add the toasted pine nuts.
