Peanut Butter Chocolate Rice Crisp

Peanut Butter Chocolate Rice Crisp

The heat of the summer is already upon us, at least over here, and I am all for a 10 min prep, no-cook, vegan, gluten-free, chocolaty, peanut buttery, playfully crunchy dessert treat snack 🙂 Seriously for a dessert, these are pretty healthy besides being incredibly delicious. Peanut butter and pistachios add a nice bit of protein and healthy fats. No other oil is added, and only a bit of maple syrup is used for sweetening. So go ahead and indulge. I love keeping these, and other variations, in the freezer for a quick fix when I need my sweet. They can be enjoyed right off the freezer or thawed a little. It’s great either way. The recipe is below:

Blueberry Oat Pancakes

Blueberry Oat Pancakes

Vegan pancakes made with rolled oats, peanut butter, blueberries and plant milk (veggemo!). I love how delicious and fluffy these turned out, and the texture due to the rolled oats add yet another dimension to be excited about. The recipe is below, right after a brief review of my plant milk of choice for this recipe.

Vegan Chocolate Cake

Vegan Chocolate Cake

A delicious, lush chocolate cake with great texture may well be the ultimate treat. And it is the holiday season with lots of chocolate cravings so I think the occasion called for the effort to bake one!

I am very particular when it comes to cakes, a little too far on the snobby side. I want the happy place between light and fluffy (also known as spongy :P), and the dense and heavy, brownie-like texture. And I don’t want the cake part to be dry, I want to feel the chocolate! So that’s the place this cake fits right in. The chocolate cake, by itself, is very much worth baking. From there on, I let the peanut butter and coconut cream do their things for the filling and frosting, respectively. The full recipe is below.

Peanut Butter Pretzel Fudge

Peanut Butter Pretzel Fudge

Sometimes my food fantasies build up to a dessert that I can’t even stop thinking about. The inspiration for this was likely just chocolate dipped pretzels. But those do lack a few things. Namely more chocolate, and peanut butter, and nuts! Now it is all complete. This is a delightfully milky (almond milky!), peanut buttery fudge with a really interesting playful texture thanks to the combination of pretzel pieces and hazelnuts. And the little bit of saltiness just make the sweet more three dimensional.

It is incredibly easy. No baking. Takes like 15 minutes or so and the whole recipe can be explained in about  a minute. The video doing just that is below, followed by the formal recipe.

Whole Wheat Granola Pancakes

Vegan Granola Pancakes

I will go ahead and call these the best pancakes I ever made. To be honest, I wasn’t sure what to expect with the granola addition but it totally worked, which is good news because now these babies have more fiber, protein, taste and texture. Another local (Charlotte, NC) pop-up event is coming soon, this time it is for breakfast and I know what I will be serving. The #vegan recipe is below.

Pancakes are one of the most fun toys in the playground that is breakfast. They somehow have a rep for being tricky, as if it is hard to get the fluff. Totally not so. They are actually pretty foolproof and super easy to make. But in their traditional form, I wouldn’t call them a health food. White flour, butter, eggs… ugh. The thing is, clean version of pancakes can be just as delicious. Scratch that, more delicious. I love the earthy fragrance of the whole wheat, and I love adding nutrient elements in. Adding fruits, seeds, nuts or grains to the batter also makes for a fun texture.

Easy Mini Caramel Tarts [Vegan]

Easy Mini Caramel Tarts
Zero to glorious in 15 minutes! This is so easy to prepare and so much fun to have available in the freezer for whenever the dessert craving calls. No refined sugars, #nobake, #glutenfree, #vegan, and incredibly delicious. The “caramel” filling here has a pretty convincing flavor with delightful tahini and peanut butter tones, and a relatively thicker consistency. The crust is basically made up of nuts and raisins because I am in love with that texture and taste. Here is the recipe:
