Five Seed and Tahini Granola Bars

This incredibly easy home made vegan protein bar is powered by five different superfood seeds, packing a serious amount protein as well as fiber, good fats and carbs. In a plant protein world largely dominated by soy, other beans, peas, gluten and nuts, the nutritional powerhouse seeds are often overlooked. But they are potent, and they are a nice alternative for those who wish to avoid or lessen soy, gluten or nut consumption.

This recipe is quite minimal, the only cooking involved is the toasting of the oats and the seeds but the bars themselves are not baked afterwards. The sweetening comes largely from dates and there is no added refined oil! And the result is a delightfully fresh and chewy consistency with an almost addictive texture due to all the variety of seeds.

The original recipe, a.k.a the Chocolate Pecan Maple Granola was really really good. No real qualms with that. But we wanted do improve the texture and clustering that is so traditional for granola, so that it can be easier enjoyed as a stand-alone snack when you need to. After a few slight flavor tweaks as well, we are now aptly calling it the “Chocolate Pecan Pie Granola”, because it is that awesome.

Mini Granola Cup Tarts

These were incredible all around, from the ease of preparation to wholesomeness, and the taste and texture. A total package. The crust is the key here and the magic comes through the combination of oats and bananas! It turns out quite robust and full of flavor. One of the best crust options I have tried so far. I am now even more in love with oats (and granola).

I have gone a little overboard with the recipe this time, showing many alternative ways. My intention is to show you how easy and versatile these beautiful little desserts can be.

I listed two ways of making the crust. The first one involves just 3 ingredients because it uses a pre-made granola. I will go ahead and suggest you use my granola because I think it is the healthiest and tastiest out there. It is also vegan and gluten-free. But you can also follow the crust version 2 in the recipe and make the whole thing from scratch. It is still fairly easy to make that way. You just mix a bunch more ingredients.

Overnight Chocolate Rawnola

Overnight Chocolate Rawnola
I appreciate a tasty burst of carbs in the morning as much as anyone and like most, I would rather not spend time cooking first thing in the morning. The overnight rawnola is just awesome like that. Next to no prep time. Just put together a few ingredients at night, throw it in the fridge and wake up to a wholesome, filling, creamy and delicious breakfast. A favorite version of mine is this fruity chocolate rawnola. In the recipe below, I left out the fruit choices but mine had a good serving of sliced bananas mixed-in and a topping of mixed berries. I liked the consistency of this recipe but you can adjust it to your taste with more or less plant milk (or play with chia seeds if you like them).
