This is not intended to be a convincing feta imitation. It is intended to be a nutritious and delicious replacement. It will remind you of feta and it functions like feta. But it is a little different and refreshing, it nicely brings out the flavors of the herbs and the olive oil. An excellent breakfast option to be wrapped in a warm tortilla, if you will. Over the years, one thing that I learned is that I suck at following recipes. Either that or the recipes are not meant to be followed. I kind of think that the latter is true. The practice I adopted, when hell bent on trying a new food, is to check out multiple recipes. I study the food from multiple sources and end up cooking my interpretation of the dish, incorporating my experiences and preferences. Turns out, many other chef’s I met work the same way.
