Sweet Tahini Tortilla Rolls

This is perhaps one of the easiest (and fastest) pastries you can make with minimum time investment and absolutely impressive results. Made with only a few common ingredients, the recipe is pretty much about spreading a few things over a tortilla and rolling it up before sending it to oven. I always loved using tahini in desserts, I think it creates a wonderful contrast to the sweet taste and lends a luscious, almost earthy flavor in a very good way. The tortillas, of course, are the time savers here. They eliminate the need to make a pastry dough from scratch and they bake into a wonderfully crunchy texture.  The recipe, along with a video is below:

  • 2 flour tortilla 8 inch diameter
  • 4 tablespoons tahini +more for topping
  • 4 tablespoons chopped pecans or walnuts
  • 2 tablespoons coconut sugar +more for topping
  • 1 teaspoon sesame seeds
  • 1 teaspoon cocoa powder
  1. Preheat the oven to 400F (200C).
  2. Layout a tortilla on a surface.
  3. Spread 2 tablespoons of tahini over the tortilla.
  4. Sprinkle 2 tablespoons of chopped pecans and 1 tablespoon of coconut sugar.
  5. Roll the tortilla tightly into a cylinder and place it on a parchment paper (or baking sheet) seam side down.
  6. Spread a layer of tahini on top of the roll, sprinkle with sesame seeds, coconut sugar and cocoa powder.
  7. Slice the roll into approximately 1 inch (2.5cm) pieces.
  8. Repeat with the other tortilla.
  9. Bake at 400F (200C) for 10 minutes.
