Orange Fennel Salad
This is one of those salads that make you feel like you should eat a salad more often. You know that appreciation of the variety of tastes and textures and no heaviness after the meal, and of the fact that you just made your body very happy. I love fruity salads but the sweetness always needs to be carefully balanced. I think fennel bulb (or root) does a fantastic job at that and it goes so well with the orange taste. The roasted hazelnuts also need to be acknowledged because they are just the perfect nuts. Here is the recipe:

Ingredients
  • 1 bulb fennel thinly sliced
  • 1 orange thinly sliced
  • 1 apple thinly sliced
  • 2 cups baby spinach
  • 2 tablespoons chopped dill
  • 1/4 cup dried cranberries
  • 1/4 cup roasted hazelnuts
Vinaigrette
  • 2 tablespoons olive oil
  • 2 tablespoons orange juice
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons maple syrup or agave
  • pinch of salt
Instructions
  1. Mix all the vinaigrette ingredients in a small bowl or a cup.
  2. Either toss the salad ingredients or if you have the patience, plate them as you'd like
  3. Pour the vinaigrette over

  1. Hey Maya, thank you soooo much for this recipe. The first time I made it when my parents came visiting – with walnut-herbs-bread fresh from the oven. Yummie!!! Since then I enyoy the downsized version (without greens and walnut and cranberries) at least once a week. So thanks again – I really love this salad đŸ™‚
