Mocha Chocolate Vegan Parfait

This was an absolute hit in our pop-up events, along with the Double Strawberry Vegan Parfait, primarily because they both are incredibly delicious treats of course. But also because they are healthy. They are loaded with nutrients, fiber and protein. And they contain none of the refined sugars or oils (when made with our vegan, gluten-free granola which only uses organic maple syrup and organic virgin coconut oil).

One of the things we are doing with our local pop-ups is that we are open sourcing our dessert recipes. Links to the recipes were printed right on the dessert labels and although a day late, this recipe is now delivered as promised.

We chose to launch our first product (the granola) with parfaits because they are loved so thoroughly by everyone in our household, even the one who is a very picky eater for some reason unknown đŸ˜‰ . I am now developing more recipes and I should say, locally serving this food is an addictive experience. I love interacting with people who are passionate about their food, I love watching and hearing their feedback when they come for seconds. Here is the recipe:

Mocha Chocolate Vegan Parfait

Mocha Cream
  • 1/4 cup espresso or 3 teaspoons instant coffee dissolved in 1/4 cup boiling water
  • 1/2 cup raw cashews
  • 1/4 cup maple syrup
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon coffee liqueur optional
Chocolate sauce
  • 1/4 cup coconut oil melted
  • 2 tablespoons cocoa
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup Dreamy Leaf Chocolate Pecan Pie Granola
  • 1 banana sliced
Mocha cream
  1. Put all the mocha cream ingredients in a high speed blender and blend until smooth.
  2. For richer taste, keep in the fridge for 4 hours or overnight. It will keep in the fridge for up to a week and can be used as a coffee creamer too!
Chocolate sauce
  1. Mix all ingredients. It should be at room temperature at the time of serving.
Parfait assembly
  1. Mix the mocha cream and the chocolate sauce briefly in swirling motions.
  2. Add 1/3 of the banana slices on the bottom of your parfait cup (pretty much any glass will do)
  3. Add 1/3 cup of the mocha cream/chocolate mix
  4. Add 1/3 cup of the granola
  5. Repeat for the other 2 servings
