Marinated Tofu Feta Cheese
This is not intended to be a convincing feta imitation. It is intended to be a nutritious and delicious replacement. It will remind you of feta and it functions like feta. But it is a little different and refreshing, it nicely brings out the flavors of the herbs and the olive oil. An excellent breakfast option to be wrapped in a warm tortilla, if you will. Here is the recipe:

Marinated Tofu Feta Cheese

  • 15 oz 425 gr extra firm tofu, diced
  • 4 springs of thyme
  • 1 tablespoon dried tomatoes
  • Small wedge of lime or lemon
  • Few leaves of fresh mint
  • 1/3 cup olive oil
  • 1 teaspoon mixed peppercorns
  • 1/2 teaspoon garlic powder
  • 2 teaspoons homemade mustard or dijon mustard
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon dry or fresh rosemary
  • 2 bay leaves
  • 1 teaspoon salt
  1. Put everything in an airtight container (a jar works nicely). Let it wait in the fridge for 3-5 days. Sauté in a skillet over medium high heat for 5 to 7 minutes.
