Mango Avocado Sandwich

Mango Sandwich
Our camping trip is sadly over. We just came back from an amazing place. A place that has it’s own time scale, sort of independent of what happens from the craziness of the silicon valley in a hour driving distance. We were at the Big Basin Redwoods State Park, which is California’s oldest park. It was amazing and humbling to sleep under some of the world’s tallest trees (at up to 375 ft. tall) that can live as long as 2,000 years. It was a place so beautiful that blue jays were considered kind of pests.

As usual after a camping trip, we arrived home exhausted. The good kind of exhaustion but still, we weren’t in the mood to cook just yet. We had left over grilled vegetables from the breakfast camp fire, and we had some nice bread in the freezer. Also the mango in the fridge was looking pretty inviting and refreshing so we put together a fruity sandwich that totally hit the spot. Here is the simple recipe:

  • 2 tbsp hummus
  • 1 to mato optionally grilled
  • 6 mini bell peppers or 1 medium bell pepper optionally grilled
  • 1 avocado
  • 1/2 mango
  • 1 cup arugulas
  • Sandwich bread
  1. Spread the hummus on the bottom bread
  2. Assemble the sandwich
