I have been having a lot of fun with vegan caramel variations lately and it only made sense to apply that to granola. The result was predictably amazing! I love this straight up as a snack, or in parfaits, or as cereal with almond milk. The easy recipe is below:
One of my favorite breakfast options is a healthy, deliciously crisp granola served with either your favorite plant milk or yogurt. Oats are awesome sources of fiber and protein and make an excellent base for a nutritious start to the day. The original recipe, a.k.a the Chocolate Pecan Maple Granola was really really good. No real qualms with that. But we wanted do improve the texture and clustering that is so traditional for granola, so that it can be easier enjoyed as a stand-alone snack when you need to. After a few slight flavor tweaks as well, we are now aptly calling it the “Chocolate Pecan Pie Granola”, because it is that awesome.
These were incredible all around, from the ease of preparation to wholesomeness, and the taste and texture. A total package. The crust is the key here and the magic comes through the combination of oats and bananas! It turns out quite robust and full of flavor. One of the best crust options I have tried so far. I am now even more in love with oats (and granola).
I have gone a little overboard with the recipe this time, showing many alternative ways. My intention is to show you how easy and versatile these beautiful little desserts can be.
I listed two ways of making the crust. The first one involves just 3 ingredients because it uses a pre-made granola. I will go ahead and suggest you use my granola because I think it is the healthiest and tastiest out there. It is also vegan and gluten-free. But you can also follow the crust version 2 in the recipe and make the whole thing from scratch. It is still fairly easy to make that way. You just mix a bunch more ingredients.
I will go ahead and call these the best pancakes I ever made. To be honest, I wasn’t sure what to expect with the granola addition but it totally worked, which is good news because now these babies have more fiber, protein, taste and texture. Pancakes are one of the most fun toys in the playground that is breakfast. They somehow have a rep for being tricky, as if it is hard to get the fluff. Totally not so. They are actually pretty foolproof and super easy to make. But in their traditional form, I wouldn’t call them a health food. White flour, butter, eggs… ugh. The thing is, clean version of pancakes can be just as delicious. Scratch that, more delicious. I love the earthy fragrance of the whole wheat, and I love adding nutrient elements in. Adding fruits, seeds, nuts or grains to the batter also makes for a fun texture.
This was an absolute hit in our pop-up events, along with the Double Strawberry Vegan Parfait, primarily because they both are incredibly delicious treats of course. But also because they are healthy. They are loaded with nutrients, fiber and protein. And they contain none of the refined sugars or oils (when made with our vegan, gluten-free granola which only uses organic maple syrup and organic virgin coconut oil).
One of the things we are doing with our local pop-ups is that we are open sourcing our dessert recipes. Links to the recipes were printed right on the dessert labels and although a day late, this recipe is now delivered as promised.
