Vegan Caldo Verde Soup

Rainy and gloomy days are soup days for me by default. Searching for green soups that I can incorporate some chard in, I came across this Portuguese beauty called Caldo Verde. Apart from the greens, it used sausages which was interesting for me. As a vegan, I rarely use plant based meat-like products but there definitely are some yummy options out there. My son and I are both soup fanatics, and he also loves his vegan hot dogs. So I simply had to try this soup. I am glad I did.

This red lentil soup is a personal favorite of mine. And it is considered one of my signature soups. As I worked in restaurants, I realized that customers were really interested in healthy soup choices. Quite a few people found both the cream based and meat stock based soups too heavy. They were essentially looking for vegan soups, some without even realizing. It turns out that vegan soups are really really hard to come by in non-vegan restaurants. It is either chicken noodle or cream of something out there.

Chard Soup

If there is one thing good about cold weather, it is the soup claiming its place back on the dining table. Granted, we don’t get much of a cold here in California but still, anything under 70 is winter for me. And of course the only cure for winter is a bowl of hot soup, with a little lemon juice, fresh green onions and parsley elevating the flavor. After it is served, and the freshly ground black pepper and crushed red chilies are added, the warmth of each gulp makes itself felt in the entire body. That’s not just food anymore, that’s an experience.
