Breakfast idea: what if I combined my morning coffee fix, dessert craving, and the need for protein, fiber, omega-3 and a ton of other nutrients into one gorgeous cup that was prepped the night before? Well, it doesn’t have to be the night before, 4 hours will do in case you want to have it for dessert in the evening too 🙂 Here is the recipe:
Sometimes I get to cheat and use a pre-made dough to go from zero to insanely delicious pastry in about 30 minutes 🙂 I have always been fond of the idea of baking tahini into desserts. Meet my new best post-workout friend: Naked Nutrition Clean Protein Smoothie, with bananas, strawberries, dates and a ton of protein. Ready for the mad gains! lol
It is the summer and all I want to do is workout, drink my smoothies and get my protein too. So I was so excited to find out about the Naked Pea Protein and Naked Brown Rice Protein (organic & sprouted no less). I highly recommend checking out their bare naked ingredient list (hint: nothing but peas or brown rice!), nutritional info and the amino acid profile. I had been intrigued about pea protein for a while now, particularly in combination with brown rice. Even the bodybulding.com was raving about it here. So when Naked Nutrition offered their samples, I jumped on it. One huge plus for me was that they offer unflavored, pure versions. While I am sure their flavored options are delicious and wholesome, I like the freedom to infuse my own flavors depending on the mood. And even play around with savory options (there is an example at the end of the post).
Crêpes are a wonderful departure from the usual pancakes and waffles for when you are in the mood for that kind of a breakfast. And this recipe, inspired by one ingredient chef, makes it incredibly easy. But do prep the batter the night before cause it needs to be refrigerated for a little bit.

The original recipe, a.k.a the Chocolate Pecan Maple Granola was really really good. No real qualms with that. But we wanted do improve the texture and clustering that is so traditional for granola, so that it can be easier enjoyed as a stand-alone snack when you need to. After a few slight flavor tweaks as well, we are now aptly calling it the “Chocolate Pecan Pie Granola”, because it is that awesome.
I will go ahead and call these the best pancakes I ever made. To be honest, I wasn’t sure what to expect with the granola addition but it totally worked, which is good news because now these babies have more fiber, protein, taste and texture. Another local (Charlotte, NC) pop-up event is coming soon, this time it is for breakfast and I know what I will be serving. The #vegan recipe is below.
Pancakes are one of the most fun toys in the playground that is breakfast. They somehow have a rep for being tricky, as if it is hard to get the fluff. Totally not so. They are actually pretty foolproof and super easy to make. But in their traditional form, I wouldn’t call them a health food. White flour, butter, eggs… ugh. The thing is, clean version of pancakes can be just as delicious. Scratch that, more delicious. I love the earthy fragrance of the whole wheat, and I love adding nutrient elements in. Adding fruits, seeds, nuts or grains to the batter also makes for a fun texture.
We have been serving this popular parfait in our pop-up events in Charlotte, NC. And we though it would be nice to share the recipe here. It is made up of two recipes actually, one for assembling the parfait (1st recipe below) and one for the strawberry cashew cream (bottom recipe).
