I was having a major pizza crave for the longest time, up until this past weekend and I am happy to report that I addressed it, big time, with home made flat breads and pizzas from scratch. Now looking back, I had been searching for a twist, a pleasant departure from the same old pizza, however good that same old may be. The inspiration struck when I spotted the jar of spicy red Harissa hiding in the fridge. It may sound like heresy to pizza loyalists out there but I am not particularly fond of the sweet marinara sauce. I like my pizza sauce savory all the way, a rich and spicy umami bomb. And Mina’s Harissa sauce was definitely up to the task.

Just as a note, I do treat and regard flat breads as pizzas, because they are. You see, the words for the Greek pita, Turkish pide, and the Italian pizza are strikingly similar for a reason. What makes the pizza a pizza is not the cheese, it is the bread.

Once homemade vegan pizza was mastered, it was hard to stop there. So I didn’t. I went ahead and made this Calzone with a hummus, sautéed mushroom, corn and sun dried tomato filling. That was yesterday and I am still living the moment of that first bite today. It was that good.

Vegan Banana Bread

Vegan Banana Bread
We managed to sneak out another camping trip this past weekend. This time to the San Mateo Memorial Park along the Pescadero Creek. As usual, it was awesome and fun and exhausting. But we had this vegan banana bread to comfort and treat ourselves by the campfire when the day was over, together with a hot cup of coffee.

I believe I had mastered the vegan cake baking before with these recipes: Masala Chai Cake and the Almond Lemon Cake. This one, on the other hand, is called a bread mostly due to the traditional naming. I view it as a cake though. And I enjoy it as one. It is on the firmer side, lightly sweetened and moist but not mushy. Banana flavor in it is not overwhelming at all and the walnuts are an absolute treat on top. All this, with 100% whole wheat flour and 100% vegan. Here is the recipe:

Vegan Hummus Pizza

I don’t always make this, but maybe I should. The more I bake my own pizza, the better it gets. This vegan hummus pizza is my pinnacle so far after a considerable number of past versions. If you have a similarly obsessive love for good bread, you understand the sheer joy I got from baking the perfect crust at home. But the story doesn’t end there.

I had discovered, a while ago now, that hummus toasted in panini sandwiches take on a much deeper, richer, more satisfying taste than its original self. The same logic, when applied to pizza, didn’t disappoint. It is a seriously viable and healthier choice instead of cheese. And I would venture to say that it tastes better.

Whole Wheat Spinach Rolls

Spinach Rolls

Perhaps the easiest way to make someone happy is to feed him/her good stuff. You can see it immediately in their eyes. That’s my first plan for this Father’s Day. Actually, that is usually my first plan for any celebration. Cooking and then taking off on a vacation, short or long, I don’t care.

An so it is today. He has been a great husband and a great partner in our parenthood adventure and we are off to celebrate. We are just about take off on a camping trip to California’s oldest state park where we are going to breathe in ancient redwood scents for the next 3 days. And I made just the perfect breakfast/road trip companions this morning. Freshly baked, steaming whole wheat spinach rolls. If you are a fan of spinach like us, and have no qualms with gluten, you will like these morning rolls. The spinach filling also uses cashew cream and that’s awesome. Just trust me on this. Here is the recipe.
