Easy Lo Mein

I am a noodle kind of girl, but the typical oil and sodium loaded noodles from restaurants don’t exactly whet my appetite. As always, homemade version wins! This easy, delicious and nutritious lo mein is what I will stick with when the cravings hit. Here is the recipe:

  • 8 oz wide lo mein noodles
  • 1 tablespoon sesame oil
  • 2 green onions separate withe and green parts
  • 2 carrots julienne cut or chopped
  • 1 red bell pepper sliced or chopped
  • 1 cup green peas
  • 3 cups baby spinach
  • 3 tablespoons reduced sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon ginger
  • 2 garlic cloves minced
Decoration (optional)
  • 1 teaspoon white sesame seeds
  • 1 teaspoon black sesame seeds
  1. Put all the sauce ingredients in a small bowl, whisk and set a side.
Lo mein
  1. Cook the noodles according to package directions. drain and set a side
  2. Heat the sesame oil in a wok or large skillet, add white parts of the onion. Cook for one minute
  3. Add all the vegetables as well as the green parts of the onions. Stir and cook for 2 more minutes
  4. Add the noodles and the sauce, cook for one more minute.
  5. Optionally decorate with the sesame seeds
