Dreamy Cheese Sauce

This is definitely one of my signature recipes and for good reason. It is a healthy and easy to make sauce that is super versatile. I use it for a delightful Mac&Cheese, as a dip sauce, sauce in or over burritos, over open sandwiches, anywhere and everywhere I can think of. The sauce’s signature status was also confirmed when my 10 year old son claimed it was better than ketchup! It’s that good lol. The recipe is below.

Dreamy Cheese Sauce

Ingredients
Roasted Cauliflower
  • 1 medium cauliflower, washed
  • 3 cloves garlic
  • 1 teaspoon salt
  • ¼ cup olive oil
Cashew sauce
  • ⅓ cup nutritional yeast
  • 1 tablespoon miso or chickpea miso
  • ¼ cup olive oil
  • ½ cup raw cashews (soaked in water for at least 3 hours or 1 hour in very hot water)
  • ¾ cup almond milk (or any plant-based milk)
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon salt
  • ⅛ teaspoon cayenne pepper
Instructions
  1. Preheat the oven to 400F (200C)
  2. Remove the cauliflower stalk and chop the rest of the cauliflower.
  3. Place the copped cauliflower on a tray lined with parchment paper.
  4. Add the minced garlic clovers into the olive oil together with the salt. Massage the cauliflowers with the olive oil mix.
  5. Roast in the oven for 17 to 20 minutes.
  6. Transfer the roasted cauliflower and all the cashew sauce ingredients in a blender and blend until smooth.
  7. Serve hot or cold, it will keep in the fridge for up to a week.
