Chocolate Hazelnut Energy Bars

I always try to keep a delicious and healthy treat in the freezer to ward off dessert cravings, so I am quite fond of super easy, no-bake recipes like this. These delicious little ones have a lot going for them. I love the taste and crunch of the hazelnuts, the chocolatey goodness and the fact that it comes loaded with protein. Treat it as a protein bar, or an energy bar, or simply as a special treat for me time. The recipe is below.

Chocolate Hazelnut Energy Bars

Ingredients
Hazelnut crust
  • ¾ cup roasted hazelnuts
  • 5 medjool dates
  • 1 tablespoon rice protein
  • ½ tablespoon maple syrup
  • ½ teaspoon vanilla extract
  • Pinch of salt
Cocoa paste
  • 8 medjool dates
  • 1 cup soaked cashews (3 hours or an hour in very hot water)
  • ⅓ cup cocoa powder
  • 1 tablespoon rice protein
  • ½ tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ¼ cup hazelnuts, coarsely chopped
Topping
  • ¼ cup melted chocolate
Instructions
Hazelnut crust
  1. Put all the hazelnut crust ingredients in a food processor and grind until sticky with some medium texture. Don't overprocess into a dough.
  2. Lay the sticky crust between two sheets of parchment paper and roll with a pin roller until it is ½ inch thick.
  3. Transfer to freezer and let chill for 3 hours.
Cocoa paste
  1. Add all the cocoa paste ingredients, except the hazelnuts, into the food processor. No need to clean the food processor from the previous step. Grind into a sticky paste.
  2. Add the coarsely chopped hazelnuts and mix with a spatula.
  3. Lay the cocoa paste between two sheets of parchment paper and roll with a pin roller until it is ½ inch thick.
  4. Transfer to freezer and let chill for 3 hours.
Assembly
  1. Take the hazelnut crust and the cocoa paste out of the freezer. Place the hazelnut crust over the cocoa paste, and merge the two layers by applying light pressure with your fingers.
  2. Drizzle with melted chocolate.
