Chickpea Salad Sandwich with Hearts of Palm

Serves: 3 cups
  • 1 can garbanzo beans (15 oz, 425 gr), drained and rinsed
  • 1 cup hearts of palm
  • 1 celery stalk, finely chopped
  • ¼ red onion, finely chopped (optional)
  • ⅓ cup parsley, chopped
  • 2 tablespoon capers
  • ½ cup pecans, coarsely chopped
  • ½ cup dried cranberries
  • ½ cup vegan mayonnaise
  • 2 tablespoons nutritional yeast
  • half lemon juice
  • ½ tsp garlic powder
  • Salt and freshly ground black pepper, as needed
  1. Put all ingredients in a food processor pulse a few times, until combined but leaving a coarse texture.
  2. Transfer to container cover and keep in the fridge.

  1. “1/2 lemon juice”? 1/2 of what, LOL? I know from the video that it is the juice from half a lemon, but you might want to correct it in the recipe. Will definitely try this recipe.
