Brown Rice Maple Cardamom Pudding
Seriously, intensely delicious. The spices and the grain in this pudding scream winter in a good, warming way. I served mine with berries, pomegranate seeds and sliced almonds to add to the texture and to brighten it up a little. Here is the recipe:

Brown Rice Maple Cardamom Pudding

  • 2 cups cooked short grain brown rice
  • 1 cup almond milk
  • 1 cup coconut cream
  • 1/4 cup maple syrup
  • 1/2 cinnamon stick
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cardamom
  • 1/8 teaspoon nutmeg
  • pinch of salt
  1. Put everything in a saucepan bring to boil.
  2. Serve warm or cold.
