Baklava has a special place in my heart and I love making it for special occasions. It does take a bit of time but it is actually pretty straightforward and it turns out just amazing every time. And it is always a big hit for entertaining guests. The recipe is below:

  • 3 cups sugar
  • 1 2/3 cups water
  • 2 cardamom pods crushed
  • 1 clove
  • juice of 1/2 lemon
  • Fillo Dough 12"x17" 28 sheets defrosted
  • 2 cups 454g unsalted vegan butter melted
  • 2 1/4 cup pistachios crushed (roasted, unsalted)
  1. Start with making the syrup. Put the sugar and water in a sauce pan and bring to boil.
  2. Add cardamom pods, cloves and lemon juice, and boil for 10 minutes at medium-high heat.
  3. Set aside and let it cool to room temperature.
  4. Preheat oven for 400F (200C)
  5. Take out the defrosted filo dough from package and lay the sheets on a flat surface. Cover the top with a wet towel to prevent them from drying and sticking to each other. If the sheets tear apart as you work with them, don't worry and just use them. Butter will stick them together.
  6. Brush a 12"x17" baking sheet with the butter.
  7. Working one at a time, lay 14 sheets of filo dough on the baking sheet, brushing each layer generously with butter.
  8. Spread the crushed pistachios uniformly.
  9. Lay another 14 sheets of filo dough over, again brushing each layer with butter.
  10. Cut the baklava lengthwise and crosswise into an approximately 2"x2" (5cm x 5 cm) lattice.
  11. Bake at 400F (200C) for 18 to 23 min, until the top of the baklava is golden brown.
  12. Take the baklava out of the oven and pour the syrup over uniformly while the baklava is still hot.
  13. Let it cool and enjoy.

    How would you present this? Say you wanted to bring it to a party. Just leave it in the sheet pan?
